Lake de Last Minute

Jordan and I had a fantastic weekend.  We made a semi last minute decision to head to the lake on Saturday, but it turned out to be an action packed little trip.  We hadn't been to the lake in several weeks so there seemed to be plenty to catch up on.  So, I'll get right to it... Top: Jordan's fancy new knife that is the size of a credit card and folds into a handle with a blade.  I was not as impressed as Jordan, but it was surprisingly a sharp little guy. Top Right: We took a ride to the nearby boat ramp.  Since the water is so low (more than 19 feel low I think), all the boat ramps are just totally dried up.  As such, it was a great opportunity to extend the boat ramp even further.  Here is a quick picture of the boat ramp with an extra 50 feet!  Someday when the water comes back up, it will be so wonderful to have the extra slab of concrete (criss-cross rebar with 18 inch centers). Jordan and I had a good little week, but boy, it was cold here in Texas! Dallas didn't get any precipitation, but our temps were in the teens.  The Austin area got some ice so, of course, the Austin schools were closed.  In Texas, any kind of ice or snow is a pretty dramatic affair.  We just simply do NOT know how to drive in that kind of weather and our temperatures usually swing from freezing to melting and back to freezing quickly which only makes the ice worse. At any rate, it was a good week for warm clothes, fires, and hot soup. The timing worked out perfect at work because we had planned our annual "Soup Day" in my department.  We try to do events here and there and it usually comes out to 1 event per month.  Spoiler alert - next month will be "Pancake Day".  Don't worry, I'll post pictures. So January soup day commenced!  We had potato, taco, bean, broccoli with cheese, and chicken soup.  We also had some more inventive recipes including

Like every other household this time of year, we were hit with the flu (dun dun dunnnnn).  Jordan and I both spent the first part of the new year feeling very sick and as a result, I've fallen behind in my blogging!  Almost every day there is something fun or interesting that happens that I want to share with ya'll but those topics keep getting pushed back! The flu started with Jordan.  He got a fever and just felt horrible.  I had a quiet weekend doing laundry while helping Jordan get back to health so I decided to try my hand at making homemade chicken noodle soup!  The soup turned out really great which is a good thing because I inadvertantly made WAY too much soup. After two full days of being sick, Jordan started feeling better and I started feeling pretty bad.  I thought I might miss this wave of sickness but couldn't escape.  The soup came in handy for me to have but we still had enough to freeze for later. Christmas 2013

This Christmas was so wonderful!  We were blessed to have my whole family home in one place enjoying each others company, amazing food, and gifts! Jordan and I were so spoiled with all the exciting presents and delicious meals.  This year, my brothers, Andy and Scott traveled from Virginia to Texas with my niece, Kenley.  It was a long drive, but we got to spend a week with them and catch up on life. My mom and I had fun having a little girl in the house.  We found all kinds of things to do and I think I took almost 500 pictures doing it!   No holiday is complete without a little baking, specifically, apple pie!  Kenley, Mom, and I sliced up apples and rolled out dough to make several delightful pies.  All week long we had pie and more pie to enjoy for dessert!  I think the poor kitchen really took a beating, but the pies were worth it.
